Apple Cranberry Bake






Ingredients:
5 Gala Apples
3/4 bag of fresh cranberries
1/2 cup orange juice
3 tbl honey
1 table cinnamon
2 cups steal cut oatmeal
3 tbl brown sugar
a drizzle of EVO

Directions
Pre heat to 400 degrees

On a cookie sheet spread the oatmeal out evenly and place the sheet in the oven for 5 min. Pull out the sheet and stir around well then redistribute it evenly over the baking sheet and bake another 5 min. By this time the oatmeal should be golden brown. Remove and pour into a bowl to cool. Once cool stir in the brown sugar and oatmeal. Stir until you get a crumbly mixture. 

Peel all of the apples and rinse them clean then slice into 8ths. Cut the core from each piece. Set aside in a large mixing bowl. Rinse and drain the cranberries and set aside in the same mixing bowl as the apples. Stir in the orange juice, honey and cinnamon until well mixed. Place in a 9x9 baking pan. Cover with foil. Bake for 30 min or until the cranberries are bubbling and the apples are easily skewered with a fork. Sprinkle the oatmeal mix on top and bake for another 10 min uncovered. Serve warm with vanillas ice cream or just plain. 

To save time I usually bake the oatmeal while I'm slicing apples and cleaning cranberries.
